a Blackberry Breakfast



  Here is the Welcome Witch at the
                                   Inn at Blackberry Creek .
Isn't she sweet? We work at this B&B in Walla Walla a couple of times each year and just love it.

    Yes, there is a creek and yes, there are lots of blackberries that grow back there. I am lucky in that the owner, Barbara,  freezes a big bag for me to use when I am cooking breakfast.

   I have a great recipe for Blackberry Cobbler but you need fresh blackberries so you will have to wait for that recipe.


                       



      But one of my favorite things to do with frozen blackberries is to make these cute little tartlets. Here's the recipe for them:

     Make a pastry dough pocket
     Insert one or two frozen blackberries
     Sprinkle with sugar
     Bake in small muffin tins for 15 min at 375

And........
   

SO YUMMY! and SO EASY!!

Easy as Pie


 Kirk and I do have a "real" home even though we are never there. It is in Parkdale Oregon - famous for it's apples. SO we are always trying to find ways to serve apples at Breakfast and here are two of our faves.....

This first one is Upside Down Apple Pie: always a hit with the guests. Because you are my favorite readers, I will give you the recipe and then you will wonder why I get paid to do this - It is SOOO easy.

First spray a pie plate and melt 2 TBL butter in it
Arrange apple slices and sprinkle with pecans
Pour 3 TBL maple syrup over the apples and
Sprinkle with cinnamon
Pour 2C pancake batter over apples
Bake at 350 for 40 min
Invert to serve and VOILA!





Now one of Kirk's specialties is his Apple Compote but he will not give out the recipe which just means that he doesn't have one and it comes out different every time he makes it. Hey, it's always delicious and that's all that matters!

So after he creates his secret compote, we put it on top of our Apple Baked Oatmeal. And since two of our recent guests: Veronica and Theresa asked for it..... here is that recipe-

Spray a 9/13 pan
Mix:
4C Oats, 1C Br Sugar, 4t Cinnamon, 4t B Powder, Salt
Add:
1C Melted Butter, 2C Cream, 4 Eggs, 4t Vanilla
       and a bunch of Craisins

Bake at 350 for 40 min

Now serve with Apple Compote [or maybe applesauce since I can not give you the compote recipe]!

A Belgian for Breakfast



As Interim Innkeepers at the Dove Inn we usually get to cook breakfast for an international crowd. The Colorado School of Mines is only a block away and we often host teachers, students, speakers and visitors of the school. So we have had guests from all over the world. It makes for a very interesting breakfast table! One morning we served breakfast for 8 and no one was from the US. We had guests from China, Japan, Australia, South Africa, France and Belgium. WOW!       

                   When we have guests from Belgium, of course we make Belgian Waffles.
Here is the recipe for Belgian Waffles that we use - taken straight from food com. It's a bit of work but soooo tasty and our Belgian guests feel right at home.

Barbie at Breakfast

When I was a young girl, my mother used this cookbook - Barbie's Easy as Pie Cookbook [copyright 1964] - to teach me to cook. I  LOVED this cookbook and so did my daughter. One of my daughter's favorite dinner recipes was "Luncheon Pizzas", a gourmet treat made from biscuits, lunch meat and ketchup. I bet she does not cook that any more! But one of my favorite breakfast recipes was "Jama Parties" and I do still cook that! Each chapter of recipes is preceded by a story involving Barbie, Ken and Midge. Barbie also includes cooking tips and words of wisdom. She calls the kitchen the "merriest room in the house" and I agree with her! Now that I am a professional INNSITTER, I still rely on Barbie from time to time!!

Barbies "Jama Party"

Here is the recipe for MY "Jama Party":
 
Cream 1/2 C cream cheese and 1/2 C ricotta
Add 1T lemon juice and 1/4 C powdered sugar
Spread on any nutty bread [I like Oregon Hazelnut]
Spread any good berry preserve [homemade is best]
Top with another piece of bread to make sandwich
Grill in batter of eggs, heavy cream and a splash of oj
Serve with lots of fresh berries and powdered sugar

       "Breakfast is the most important meal of the day"
